Nothing quite brings people together like food – and all parents know the importance of early nutrition for a child’s development. We all lead busy lives and understand the gnawing question, ‘what’s for dinner?’ and we have been particularly focused on food and nutrition in our parent workshops, so we thought we’d combine some simply, yummy family recipes for the whole family to enjoy!
This delicious dinner takes less than twenty minutes to make and can be easily portioned to suit people of all ages and fill the whole family. Bring pasta to boil to cook the pasta, adding the broccoli halfway through. Fry garlic in some butter on a low heat and grate parmesan cheese. Add two cups of pasta water to the butter and garlic, strain the pasta and mix altogether with parmesan cheese. Serve and enjoy!
Chicken and Vegetable Curry
Heat olive oil, half an onion and a clove of garlic over medium heat, add cubed chicken for five minutes, then add two tablespoons of tomato paste, two teaspoons of curry powder and stir for a minute, coating the chicken. Add a carrot, a cup of peas, chopped red pepper and a can of coconut milk. Reduce heat and simmer for ten minutes. Serve over brown rice for a healthy meal.
Mexican Sweet Potato Boats
Cook sweet potatoes as per usual. In a medium skillet add half a cup of black beans, half a cup of sweetcorn, half a teaspoon of paprika, garlic powder and a quarter teaspoon of cumin and cook for five minutes, stirring often. Cut the sweet potatoes in half, scrape out the potato from the skin to smash before mixing with the bean and corn and placing back into the skins. Sprinkle avocado, tomatoes and cheese on top to serve.
